Ingredients
3 pounds of venison diced
1 large onion chopped
1 large green pepper chopped
2 large cloves of garlic minced
3 jalapeno peppers seeded and chopped
1 14.5oz can of diced tomatoes
1 can of tomatoes & chilies
2 teaspoons of cumin
2 teaspoons of chili powder
1 tablespoon of olive oil
salt & pepper to taste
water
cornstarch

Directions
1. Saute the minced garlic in olive oil for about a minute.
2. Add meat and brown.
3. Add tomatoes, onion, pepper and spices. Add enough water as to prevent scorching. Its ok if its on the watery side.
4. Bring to boil, cover reduce heat and allow to simmer for 3 hours stirring occasionally.
5. After cooking, combine cornstarch with water and add to the meat to thicken the gray to your preference.
6. Serve

Carne Guisada is a Tex-Mex dish that goes well with soft tacos, or tortillas. This is a good recipe for meat that tends to be tough.

Ingredients
1 9oz Package Fresh Cheese Tortellini
1/4 Cup Olive Oil
2 Tablespoon Red Wine Vinegar
1/2 Teaspoon Dried Rosemary
1/2 Teaspoon Minced Garlic
1/2 Teaspoon Sugar
1 1/2 Cups Ham diced
1 Cup Red Bell Pepper diced
1 4oz. Jar Marinated Mushrooms drained
1/2 Cup Black Olives chopped
4 Scallions white and green parts, chopped
Grated Parmesan Cheese

Directions
1. Bring a large pot of water to boil. Add tortellini and cook according to the package directions.
2. Drain and rinse tortellini under cold water.
3. In a large bowl whisk together the oil, vinegar, rosemary, garlic and sugar.
4. Add the tortellini, ham, bell pepper, mushrooms, olives, and scallions to the dressing and toss to coat.

Ingredients
4 tuna steaks, about 1 inch thick (2 lbs. total weight)
Salt and fresh ground pepper, to taste
4 sprigs fresh thyme, chopped or 1 tsp. dried
1 tsp. fresh grated or dried powdered ginger
1 sliced clove garlic
2 tbsp. soy sauce
1 tbsp. fresh lemon juice
2 tbsp. olive oil

Directions
In a mixing bowl blend the salt, pepper, ginger, garlic, thyme, soy sauce, lemon juice and olive oil. Brush the mixture all over the tuna steaks. Cover with plastic wrap and let stand 1/2 to 1 hour until ready to broil.
Broil on rack under broiler about 4 inches from heat source, about 3 minutes per side, or grill on high (cover closed) 3 minutes per side. Leftover marinade can be heated and served over steaks.

Ingredients
1 Pound Shell Macaroni
1/4 Pound Provolone Cheese
1/2 Pound Salami
1/4 Pound Pepperoni
1 Small Jar Green Olives
3 Tomatoes
2 Green Peppers
2 Onions
3 Stalks Celery
1 Can Pitted Black Olives
1 Tablespoon Salt
1 Teaspoon Pepper
1 Tablespoon Oregano
1/2 Cup Vinegar
3/4 Cup Olive Oil

Directions
1. Cook and drain macaroni shells.
2. Chop cheese, salami, pepperoni, tomatoes, onions, green peppers and celery into small cube size pieces.
3. Added chopped ingredients into bowl along with black and green olives and macaroni.
4. Make the dressing. Mix the salt, pepper, oregano, vinegar and olive oil.
5. Pour dressing over salad and toss.
6. Refrigerate and let sit overnight for flavor to blend.

Ingredients
1 Pre-made Pizza crust
2 Tablespoons Extra Virgin Olive Oil
1 Pound Ground Chicken
3 Garlic Cloves Chopped
1 Small Onion Chopped
1 8 oz Can Tomato Sauce
1 Cup Parmesan Cheese
1 1/2 Cups Provolone Cheese
1 Table Spoon Basil
1 Table Spoon Red Pepper Flakes
1 Table Spoon Oregano
1 Table Spoon Parsley
Salt and Pepper

Directions
1. Brown ground chicken with Extra Virgin Olive Oil. Preheat oven 425.
2. Add chopped garlic, onion and salt pepper to browning chicken.
3. After 5 minutes of cooking add parsley, red pepper flakes, oregano and tomato sauce.
4. Top pizza dough with meat sauce and cheeses.
5. Bake pizza until golden and bubbly, about 15 minutes.
6. Top pizza with basil.
